Pumpkin Oatmeal

This oatmeal is truly delicious; it is also the most voluminous oatmeal I have ever made!

*Pumpkin Oatmeal*

  • 1/2 cup oats
  • 1/2 cup pumpkin
  • 1 1/4 cup water
  • toppings of choice
  1. Combine everything, except toppings, in a large bowl and microwave for 5 minutes.
  2. Stir, and microwave for 4 more minutes.
  3. Let cool for a little so you don’t burn yourself.
  4. Top with whatever you wish.  I used LOTS of cinnamon, some soy milk, granola, and strawberries.  (After the picture, I also added sunflower seed butter which makes everything taste better!

This is obviously a great breakfast but I ate it for dinner..I don’t know about you, but I love breakfast for dinner 🙂
